Buckeye Brownies

If you're anything like me, you might decide to combat stress by indulging in a decadent dessert. And with 4 busy kids and a new business, well, desserts are in high demand. So I concocted the best mixture I could think of - mint Oreo cheesecake - and then upped the ante by adding a brownie crust (because why the heck not?)! Whip this up any time you feel the urge to erase all your stress with some melt in your mouth goodness!

Ingredients

Brownie Layer
½ cup unsalted butter, melted and hot
1 tablespoon melted coconut oil
¼ cup white sugar
¼ cup dark brown sugar
2 large eggs
1 egg yolk
1 tablespoon pure vanilla extract
½ cup flour
½ cup unsweetened cocoa powder
¼ teaspoon salt

Peanut Butter Layer
1½ cups peanut butter
½ cup unsalted butter, softened
2 cups powdered sugar
1 tablespoon vanilla
1-2 tablespoons milk or heavy cream

Chocolate Layer
2 cups semisweet chocolate chips
½ cup heavy cream

Directions

Preheat oven to 350 degrees.

Line a 9x9 glass baking dish with parchment paper

Combine hot melted butter, oil, and sugar together in a medium-sized bowl. Whisk well. Add the eggs, egg yolk, and vanilla, and beat until lighter in color.

Sift in the flour, cocoa powder, and salt. Mix until just combined. Do not over mix.

Pour batter into the prepared pan, smoothing it out with a spatula.

Bake for 18-20 minutes, then remove and set aside.

While the brownie base is baking, start on the peanut butter layer.

Blend the peanut butter, butter until combined. Mix in the powdered sugar and vanilla. Add milk or heavy cream to reach the desired consistency. Use a low speed on an electric mixer to keep less air from getting into the batter. Scrape down the sides of the bowl.

Pour the peanut butter mixture over the brownie base after it has cooled slightly. 

Place chocolate chips into a large bowl and set aside.

In a saucepan over medium heat, bring the cream to a low boil. Remove from heat and pour over the chocolate chips. Cover the bowl and allow it to sit for 5 minutes. 

Using a whisk, mix the melted chocolate into the cream, whisking until it is smooth and glossy. Pour the chocolate over the peanut butter layer and smooth with a spatula.

Serve and enjoy!
