Strawberry Lemon Bars

Imagine biting into a moist and tender lemony brownie-like base, that's infused with tangy lemon zest and bursting with the natural sweetness of fresh strawberries. Each slice is generously loaded with slices of succulent strawberries that add a burst of juicy flavor with every bite. To top it all off, a creamy lemon cream cheese frosting is spread on the surface, creating a luscious and indulgent contrast to the tangy filling below. The frosting is the perfect complement to the bright and fruity flavors of the slice, giving it a smooth and velvety finish that will leave you wanting more.

One bite of this scrumptious treat and you'll feel like you're indulging in a slice of summer heaven!

Ingredients

Lemon Layer
1 cup flour
¼ cup white sugar
¼ teaspoon salt
¼ teaspoon baking powder
1 tablespoon lemon zest
¾ cup unsalted butter, melted
2 large eggs
1 egg yolk
¼ cup lemon juice (or more, if you choose)
1 teaspoon pure vanilla
8-10 oz of strawberries, finely chopped

Cream Cheese Frosting
8 oz cream cheese (one brick)
½ cup unsalted butter, softened (one stick)
1 cup powdered sugar
1 teaspoon pure vanilla
Additional lemon juice and lemon zest, to taste

Directions

Preheat oven to 350 degrees.

Line a 8x8 or 9x9 glass baking dish with parchment paper

Mix flour, sugar, salt, baking powder, and zest together with a wire whisk.

Add melted butter, lemon juice, eggs, egg yolk, and vanilla and stir until completely combined.

Fold in the chopped strawberries and stir until just combined. Do not over mix as air bubbles from extra mixing will affect the final texture.

Pour batter into the prepared pan, smoothing it out with a spatula.

Bake for 20 minutes, or until a toothpick in center comes out clean. If possible, err on the side of being underbaked. Some of the melted butter will rise up to the top and it will not look done when it is. If you overbake, the texture will be more like a cake than a fudgy brownie.

While the base is baking, start on the frosting.

Blend the cream cheese, butter, and sugar until combined. Add the vanilla, lemon juice, and lemon zest and mix well. Set aside.

Remove from the oven and let cool completely before topping with the frosting, otherwise it will melt.
