Bars:
½ cup butter (softened)
⅓ cup white sugar
2 eggs
1 egg yolk
⅓ cup lemon juice
¼ teaspoon salt
1 tablespoon vanilla
1 tablespoon lemon zest
3/4 cup flour
1/2 tablespoon poppy seeds
Frosting:
8 ounces (1 block) cream cheese
½ cup (1 stick) butter (softened)
1 ½ cup powdered sugar
1 tablespoon vanilla
⅛ teaspoon salt
¼ cup lemon juice
1 tablespoon lemon zest
Corn starch or arrowroot powder
Preheat oven to 350 degrees. Line an 8x8 or 9x9 pan with parchment paper and set aside.
In a large mixing bowl, combine butter, sugar, eggs, yolk, lemon juice, salt, vanilla, and zest. Mix well. Add in flour and mix until well combined. Add poppy seeds and mix on low until just combined.
Pour into prepared pan and spread into an even layer. Bake for 15-18 minutes or until edges are just turning golden and the center is just barely set. Do not over bake.
While the bars are baking, prepare the frosting.
In a large mixing bowl, beat the cream cheese and butter together until smooth and creamy. Add sugar, vanilla, salt, lemon juice, and lemon zest and mix until well combined.
If you need a thicker frosting, add corn starch or arrowroot powder one tablespoon at a time and mix well until you reach the desired consistency. These will add thickness without more sugar and shouldn’t alter the flavor very much unless you add too much.
Wait until bars have cooled to add the frosting on top, otherwise it will melt and leave you with a sticky gooey mess.
